It’s high time I talked about my life outside of baking cakes, huh? I thought I’d share some pictures from a short beach trip my brother, a couple friends, and I went on last weekend. The highlight was most definitely the canoeing. From where we stayed, we could bike it on over to the docks at the bay. (We’re talkin’ Fenwick Island, Delaware, which is between the Atlantic Ocean and the Chesapeake Bay.) It was super sweet. Of course there…

Raspberry Coconut Cake

raspberry coconut cupcakes

This week I’ve been working on lots and lots of cake recipes using sweetened coconut flakes. So far, two have been successful. The first: raspberry coconut. It’s mad tasty, I promise. One thing of note with this recipe: the batter won’t rise very much, so you should fill your pan or cupcake liners at least 3/4 full when baking! Banana Cake or Cupcakes

I felt kind of odd creating a banana cake recipe because so often bananas find themselves in muffins. But I had some super ripe bananas that I needed to use up. So…banana cake it is! Banana Cake or Cupcakes Makes about 18 cupcakes or just over enough batter for one 9″ round cake pan. (Note that a typical cake involves doubling the recipe and baking two pans’ worth of batter.) Ingredients 1 1/2 cups cake flour 1 tsp baking powder…
